Pole-caught (and dolphin-free) from the bay of biscay in the Basque province of northern Spain, it is hand packed fresh from the ocean and preserved in Spanish olive oil with a touch of salt.

Producer: arroyabe is a family owned company located in Bermeo, a coastal town of the Basque region with a long fishing tradition. They purchase their fish fresh directly from the fisherman as they return from the sea early each morning. They have a state of the art facility with iso 9001 and HACCP certification, yet retain the traditional methods of cleaning and packing much of their fish by hand to ensure the highest quality product.
