In 1984 the Peris family purchase a long abandoned 18th century co-op winery and started producing cava. In 2000 the family realized that cava production was becoming commoditized. They began their “Gaintus Project” to revive the almost extinct variety Sumoll. Their production now centers on Sumoll and Garnacha.
Completing the alcoholic fermentation of this Parellada in the bottle lends bubbles and a slightly rustic notes of cereal to a citrusy blend of green fruit and apple with a hint of exotic mango. This is an interesting alternative to Cava.
