Lady Edison Ham start with the hind legs from NC hogs raised on pasture by Animal Welfare Approved farmers who raise a 3-way heritage cross of Berkshire, Chester White, and Duroc. These hams are dry-cured and then aged for a minimum of 2 years.
Winner of a 2017 Good Food Award, the Lady Edison Extra Fancy Country Ham is a rich, flavorful ham. Aged for at least 24 months, it is a pure expression of pork and time. Comparable to its Spanish counterpart Serrano, this long-aged ham has a taste more savory than salty and a texture that is at the same time supple yet firm. Lady Edison hams have a distinct but mild 'ham funk' and is buttery and rich and not too salty.
You will find Lady Edison on the menu at fine restaurants throughout the United States, including Momofuko in NYC and Mateo in Durham, NC. Made in Wayne County by the Worrell Family.
