WHAT IS OSETRA?

Of 27 species of sturgeon, Osetra caviar is roe that comes specifically from the Caspian native sturgeon species Acipenser gueldenstaedii. It is known for its nutty, buttery flavor, and color ranging from umber to amber and gold, the most coveted. Golden roe was immediately reserved for the king (hence, our Royal grade).
